Local resources and ingredients and Istria's turbulent past have largely determined today's gastronomic offer in Istria. Thus, various traditions have been interwoven within folk cuisine, which is based on nature (wild herbs, aromatic spices, seasonal fruits and vegetables, game, seafood, olive oil, wine, etc.), and the influences of the Frankish and German feudal authorities which were also introduced, as well as Romanesque dishes and cuisine that have been arriving with the Slavic population since the 7th century.

However, the biggest mark and influence was left by Venetian gastronomy, since the greater part of Istria was governed by Venice for almost 500 years (until the end of the 18th century).

In the area of the municipality of Kršan, traditional dishes are based on the use of local ingredients such as: pasta, polenta, sausages, pork loin, prosciutto, cheeses, fish, honey, red and white meat, game, snails, asparagus, different types of wild herbs, olive oil, wine, etc. Among the abundance of top-quality dishes, the most famous dish of this region is krafi. Krafi is pasta stuffed with cheese. The dough it is made from is different depending on whether it is boiled or fried. Krafi have been constantly upgraded in a culinary way over time, confirming the liveliness of this culinary delicacy. Thus, Plomin sailors brought a previously unknown ingredient to these parts - nutmeg, which has become an integral part of krafi.
